Red wines.

  • The chosen varieties to realise our Red wines are Merlot, Syrah and Cabernet Sauvignon. Varieties classified as “universal”, because they have demonstrated in several regions of the world his high quality and its adaptability to different situations, providing wines of good qualitative level.
  • The total area of vineyard occupies 8 hectares, between grafted and new plantations which are in “Integrated Production”. In order to determine the date of grape harvest, it is realised a control of maturation in each parcel and each variety.
  • The grape harvest is realised by varieties, choosing the optimal time of maturation of the grape when they present an optimal relation between total acidity and Beaumé degree and an suitable phenolic maturity and manual form, with special care in the manipulation of the grape.
  • For the elaboration of our Red wine Valdivieso, we used the most modern technologies of wine production, with separation of each varietal and prefermentation maceration to 10º, “delestage” and fermentation controlled to 22º temperature. After the completion of the alcoholic and malolactic fermentation, is realised a “coupage” between the varieties “, and happen to aging in Barrels of French Oak.
