Chipiona Muscatel.
- Between the most famous wines of our D.O., is undoubtedly , the Chipiona Muscatel, a wine singular and unique from our earth, soul of chipionero bottled, and perhaps the Muscatel with highest quality of the world.
- The grape variety: The Muscatel cultivated in Chipiona, is the grape variety denominated “Chipiona Muscatel ”, original of Africa and cited in the Antiquity by Columela in the first years of the Christian era. Is a grape variety of own character and genuine, with excellent taste, and that has made famous to our locality throughout the world. Its singularity is due to the influence of two very important factors:
- The Land: In the lands of Chipiona the predominant ground is the sand, that maintains a structure very porous and permeable and they are warmed up more than other lands.
- Climatology: Our Climate is the own of southern area of Spain with warm temperatures. Very influenced by the softness of the Atlantic Ocean, with predominant west wind, which exerts an effect softening of the summer temperaturas.
- The Muscatel required the proximity of Sea, because they are the breezes that come from the beach and sands of Chipiona those that determine the variety, causing that it is developed of native form in Chipiona, with a taste and matchless bouquet.
- His elaboration is realised of artisan form like comes happening from generation in generation with the tradition inherited. With grapes of our muscatel vineyards. Once the grape is ripe, with a minimum of 14º of Beaumé and the best sanitary conditions, is transported, in boxes of 18 kg, to the Wine Cellar where they proceeded to their grinding, facilitating the extraction of Muscatel by small horizontal presses of stainless that it requires a very slow and traditional process.
- Obtained Muscatel Must and after the decanted process, remove all solids and impurities, is transferred to the stainless steel tanks of controlled fermentation. Alcohol is added for her stabilizing with 15º or 17º of maximum alcohol level for prevent the fermentative activity because for her high sugar concentration arises spontaneously the fermentation.

- After two months and after the operation of clearing impurities of must, are realised organoleptics analyses or wine tastings by our enologist and select those with the best fruity bouquet and great intensity than will assigned to our “Criaderas” in Barrels of American Oak to initiate their ageing process.
