Raisin Muscatel.

  • A very special mention deserves our more emblematic and representative wine, raisins muscatel, that requires a special process of elaboration based on the system of “Pasil” own and exclusive of Chipiona and whose origins dates back to the Classic Antiquity. Consists in dehydrating or drying the grapes for the sun action, the grape is extended on the ground, that they must be clean of vegetal rest, stones, etc., and enough worked to penetrate sunshine.
  • The sand favors the penetration of sunlight and allows retaining the heat during the day and expelling during the night, speeding dehydrating with highs sugar concentrations (25-26º of Beaumé) and a decrease of the grape of more of 70%.
  • The process of "Pasil" lasts approximately 15 days. In the first week of exposure to the sun the bunches grape are turn around, with extreme care, so that the grapes can be dehydrate of homogeneous form.
  • Completed the dehydrating process, the grapes takes harvested by hand and move to the wine cellar for its elaboration. Given the conditions of dehydrating, the pressing operation is very difficult. Once obtained the juice of raisins, are realised the necessary corrections until stabilizing the raisins muscatel in 15º of Alcohol.
  • Arrived the moment of clearing impurities, in October, and after the determination of organoleptics analyses or wine tasting by our enologist, the muscatel is transferred to our “soleras” and “criaderas” where time, the nobility of the oak and the care of our professionals will make of him a matchless product.
