“The Madroñales” Wine Cellar.

  • It´s our Wine Cellar of Elaboration, situated in Sanlúcar-Chipiona road, with a total surface superior to the 6,500 square meters and with capacity to produce more than 1.250.000 liters of grape palomino and more than 350,000 liters of muscatel of Chipiona.
  • Our wine cellar is modern and innovating. It has a wine production plant destined to the elaboration of Wines of the D.O., “Sherry/Xeres/Sherry”, where they belong our Muscatels and the new young wines that the market demands: Red and white wines that comply with the quality control indicated for the certification Earth Wines of Cadiz, very appreciated in the market.
  • We control all the process of wine production that goes from the reception of grape (winepresses stainless steel) where is stripped to 100%, grinding gently without tearing the grape and it is come to the gradual selection of must, happening through the “desfangado”clean or must facilities whose most important mission is to eliminate all the solids, lees and impurities that may give an earthy flavor to musts before fermentation until the controlled fermentation plant where it is fermented to very low temperature, allowing our wines have an fruity bouquet, with a marked presence of the varietal and they are enormously clean and healthy.
  • The integral control of the wine production process has located to us at the head of the D.O and has enabled us to have a recognized prestige within the sector.
  • We also have, after R + D project, with a manufacturing plant of grape syrup, with stainless steel boilers and fully automated which allows us to sweeten our wines with this natural and organic product. The grape syrup it obtains with the baking of must to mild temperature and reducing it to fifth part. The grape syrup gives us, without a doubt, the taste of yesteryear in our olorosos and muscatel wines.
